Undeniably captivating, the Pyxis is made with all native yeasts and spent nine months in amphora of both terracota and sandstone, where it was left untopped for six months to encourage the formation of a flor yeast. The result is a wonderfully oxidative, incredibly rich Chardonnay, with waxy, nutty aromatics and a palate of fleshy, ripe peaches, nectarines, and intense citrus oil, along with preserved lemon, alongside a wild umami, miso character that shows great interplay and complexity.
